Coconut Crumbed Chicken

Healthy Oven Baked Crumbed Chicken …

Note: If you aren’t a fan of coconut, you can use almond meal - it still tastes amazing. This recipe also uses a little bit of bread crumbs, to make them gluten free just leave them out.

You will need:

- 500g Chicken Breast

- Coconut oil

- Coconut flour & Almond meal (GF option) or Bread Crumbs

- Olive oil

- Dried herbs such as Thyme, Rosemary & oregano

- Salt & Black Pepper

- Parmesan (optional)

Method:

1. Pre Heat the oven to 180 degrees. Lay baking paper over a baking tray ready for the chicken.

2. Using a plate, combine 1 cup of coconut flour, 1 cup of bread crumb mix or almond meal and add your dried herbs, mix together. (Add the optional parmesan)

3. Use a bowl combine 1 cup of melted coconut oil and 1/2 cup of olive oil.

3. Slice each chicken breast into small pieces. If you want them to look pretty, butterfly the chicken breast and flatten the pieces using baking paper and a rolling pin or the back of a spoon.

4. Dip one piece of chicken in the oil, ensure the whole piece is covered then roll into the coconut crumb mix and place of baking tray, Repeat this step for all the chicken pieces making sure they are covered nicely with the crumb.

5. Bake in the oven for 20-30 minutes depends on the size of your chicken pieces and until they are golden brown.

6. Enjoy with a salad, toss them through a pasta, or even a chicken schnitzel sandwich :)
