Choc Cashew Balls

This recipe is for the sweet tooth, or those cravings you get mid afternoon or after dinner. You don’t have to use just cashews, feel free to add in any nut mix you like and you can always opt out the maple syrup for dates. I love this recipe because once you have made it once it is actually quite quick to do. There is no baking required and you can always change and play around with ingredients and flavors.

Ingredients:

  • 250g Cashews

  • 1 tbsp coconut oil

  • 1 tbsp maple syrup

  • 1 x scoop salted caramel natural protein (optional)

  • 200g Dark Chocolate (80% or more)

Recipe:

  1. Place cashews in a bowl, pour over boiling water to completely cover them. Let them soak for around 20 min.

  2. Drain the water out and pour them into a blender/food mixer and add coconut oil, protein and maple syrup - blend until all mixed together and texture should be slightly wet & grainy.

  3. Roll them into balls and place on a plate with baking paper underneath. It should make around 15 depending on the size

  4. Place in the fridge to set for about an hour.

  5. Heat the chocolate in a small saucepan over low heat. Take off the stove and place on a chopping board. Take out the balls from the fridge.

  6. Coat each ball with chocolate, I found a trick is to hold & tilt the saucepan, then one ball at a time dunk it into the melted chocolate, using a spoon or skewer stick to help completely cover it and take out of the chocolate.

  7. One completely covered in chocolate, place it back on baking paper, repeat until all balls are covered.

  8. Put them back in the fridge to set

  9. Enjoy with a nice cup of tea :)
